Apple Butter

So, as I said yesterday, I started making apple butter in my mom's slow cooker at around 11:30. It cooked on high for two hours, then low for about 7 hours with the lid on. I took the lid off a little early because there was liquid coming up onto the lid and seemed to want to steam away. I took the lid off at about 7:30, it was supposed to be ready after an hour - not so. Some comments told me that it was going to take 4-6 hours more then that one hour! I thought that I probably would be canning a little late, but no big deal. 11pm rolls around, and it still has some liquid on the edge of it when put onto a plate. I called my mom, who said it was perfectly fine to turn it off or to just keep warm and cover it the whole night.

I went to bed and set my alarm for 5am so I could get up and uncover the lid. At 8am, I went and checked on it, and it STILL had liquid on the edge of it when I put it on a plate. I went back to bed for a little bit, and half-awake, I decided I should have some toast with some of it on it. I conluded that I did indeed make apple butter. I now have 12 jars of Christmas presents, which I will have to put a note on to please return the jars!



I used a "hot water bath", where I heated the jars and then filled them, put the lids and bands on and then boiled them!



I'm going to give three large jars to Mike's grandparents, and jar to each of his parents. That still leaves me with 7 jars!

I'm planning on doing the exact same thing this holiday season!! I've got the apples and the jars all set to go, I just haven't got around to actually making it yet.
