I got the recipe from here, and even though it explains that the batter will be thick, I still was surprised with how thick!
Apple Muffins
Cream together:
2 cups sugar
2 eggs
1 cup oil
1 Tablespoon vanilla
Sift: ( She didn't sift and neither did I and they turned out great )
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
3 cups peeled, cored, diced apples (around 3 apples)
Brown sugar for topping (around 1/2 cup)
Directions:
Preheat oven to 350 degrees.
Add dry ingredients (did this by adding all but the flour them mixing, then adding the flour a cup at a time) to creamed mixture. The batter will be very thick. Add the diced apples.
Butter & flour (just sprayed, didn't flour) muffin tins or use paper liners. Fill muffin tins almost to the top about 3/4 of the way full. Sprinkle with brown sugar.
Bake at 350 degrees for 20-25 minutes. Makes 18-24 muffins.

It looks like cookie batter, but it loosens a little bit after the apples.
(I had scooped out most of the muffins by then)
And they have tons of apples in them too, it seems like a lot but they are very apple-y! (That picture is pre-brown sugar sprinkles!)
